Aji Panca chile pepper is a type of chili pepper that is commonly grown in Peru, and is the 2nd most popular chili in Peru only surpassed by its brighter, and hotter, friend the Aji Amarillo chili. It has a berry-like taste and can be used like citrus zest, or ground and tossed with foods just before serving.
One can quickly make a paste from Aji Panca with garlic, salt, and olive oil, which makes a nice rub for kebab or a roast.
