Mung beans are loaded with protein and numerous vitamins and minerals. They do not have a strong taste themselves, but absorb flavors well which lend themselves to a wide variety dishes.
Mung beans do not require soaking prior to cooking but soaking overnight does allow the beans to cook faster. If soaked, drain and rinse the beans and then cook in water to cover for about 30 minutes, or until tender. The beans' versatility makes them great in soups, stews, or as an alternative to chickpeas in hummus.
